In this informative video, Vera shares how she uses one butternut squash, around 1kg, to make three main dishes and a dessert. Vera doesn’t own a freezer, and cooking the whole squash at once, and creating several meals for the following few days, prevents any food waste and saves energy.
Vera makes a delicious soup, a healthy salad with mustard greens and roasted chickpeas, a leek and squash galette with goat cheese and pecans and a decadent marbled winter squash bundt cake with chocolate glaze!
